Crackle Top Ginger Cookies
1 cup shortening
2 cups brown sugar, firmly packed
1 egg, beaten
1/2 - 1 cup sorghum or molasses (I used sorghum most often
because it is not as strong and only used 1/2 cup)
1/2 tsp salt
2 tsp soda
1 - 2 tsp ginger
1/2 tsp cinnamon (opt) I usually put that in because I love
cinnamon
1 tsp vanilla
4 - 4 1/2 cup flour. The dough will be sticky until
you cool it for a couple of hours.
Roll into balls and roll in sugar. Slightly flatten
before baking or they will not flatten out like they should.
Bake at 350° F just until set; these freeze well - if they make it that long :)
